Ingredients:

Preparation:

  1. Prepare the beans the day before. Put them in a pot and pour cold water so that it extends about 2 cm above the beans. Soak the beans overnight
  2. The next day, start cooking the beans in the soaking water. Before the water boils, add the bay leaves and peppercorns and allspice seeds to the water. Cook covered and on a low heat for about 1.5 hours.
  3. While the beans are cooking, chop the onion and press the garlic. Dice the bacon and slice the sausage.
  4. Place the bacon in a dry frying pan and, over a low burner, start to render the fat. After a while, add the sausage, onion and garlic. Fry everything, stirring every now and then, until the onions turn golden. Transfer to the boiling beans.
  5. Peel and cut the potatoes into small cubes and add to the beans.
  6. Pour in the tomatoes, mix all the ingredients and simmer covered for approx. 20 minutes.
  7. Finally add the tomato paste and the remaining spices. Stir, cook for 10 minutes and remove from the heat - let the dish rest for a while and let the flavours meld. Tastes best the next day served with fresh bread.
