DESCRIPTION:
Pearl couscous (mhammas) comes from semolina grains. These are tiny balls of pasta (much larger than regular couscous, however) formed by combining flour and water. In the old days, broken wheat grains were skillfully mixed by hand with flour and salt water until the balls were the right size, which were then passed through several sieves of different mesh sizes. Pearl couscous mhammas is a staple ingredient in Arabic cuisine, northeastern Africa and southern European countries. It goes well with salads, soups, sweet and salty dishes. It is valued by physically active people and vegetarians, due to the presence of valuable protein. It is distinguished by its high content of iron, phosphorus and calcium.
