Ingredients:

• 300 g farfalle pasta

• 300 ml water
• 4 tbsp 18% cream
  
• 150 g fresh chanterelles
• fresh basil
• spring onion
• 1 tbsp butter
  
• spices: salt, pepper, ground nutmeg, garlic
  

Preparation:

1. Clean the chanterelles. Pour 3 cups of warm (but not hot) water into a bowl and dissolve a flat tablespoon of salt in it. Place the chanterelles in it and wait 2-3 minutes until the sand is at the bottom of the bowl. You can repeat the process 2-3 times - until the mushrooms are clean.
2. Cook the pasta according to the recipe on the packet.
3. Chop the onion.
4. Heat the butter in a frying pan and fry the onions until browned. Season with garlic.
5. Add chanterelles and fry for approx. 5 minutes, stirring continuously.
6. Mix the sauce with 300 ml water and cream. Pour into the chanterelles and cook over a low heat until the sauce thickens.
7. Mix the sauce with the pasta and serve on plates. Sprinkle with pepper and garnish with fresh basil.
