This simple recipe for grilled toasties with Tarczyński Kettle-Cooked Ham is perfect for a summer lunch, a packed lunch for work or a meal on the go.
Ingredients:
- 4 slices of sandwich bread or toast bread
- 8–10 slices of Tarczyński Kettle-Cooked Ham
- 4 slices of yellow cheese (Gouda or Edam)
- a few crisp lettuce leaves
- 1 large tomato
- butter for spreading
Basil Sauce:
- 3 tbsp mayonnaise
- 2 tbsp Greek yoghurt
- a handful of fresh basil
- 1 small garlic clove
- 1 tsp lemon juice
- salt and freshly ground black pepper to taste
Preparation:
- Blend all the sauce ingredients until smooth and chill for a few minutes.
- Lightly butter the outside of each slice of bread.
- Layer one slice with cheese, ham and another slice of cheese. Top with the second slice of bread.
- Grill in a sandwich press, on a griddle pan or barbecue for 3–5 minutes until the bread is golden and crispy and the cheese has melted.
- Allow the toastie to cool slightly, then open it and add the lettuce, tomato slices and a generous amount of basil sauce.
- Close the toastie, cut it in half and wrap it in baking paper or place it in a lunch box.
Tip
If you're taking your toasties on the go, add the lettuce and tomato just before leaving home to keep the bread nice and crispy. They also taste great served with pickled cucumbers, vegetable crisps or fresh fruit.
