Grilled black pudding with apple and onion 0
Grilled blood sausage with apple and onion

Ingredients:

  • 450–600 g of black pudding
  • 2 large onions
  • 2 apples (preferably slightly sour)
  • 2–3 tbsp oil (e.g. rapeseed oil) or butter
  • 1 tsp marjoram
  • ½ tsp black pepper
  • salt to taste
  • optional: 1 tbsp honey

Preparation:

  1. Heat oil or butter in a pan. Add one onion sliced into strips and cook until soft and translucent. Then add the apples sliced into wedges and fry for 2–3 minutes until slightly softened. Season with marjoram, salt and pepper. Optionally add honey and mix well.
  2. Lightly score the black pudding on top (this prevents it from bursting during grilling). Cut the second onion into larger chunks.
  3. Place the black pudding on aluminium trays or foil, top with the fried apple and onion mixture and add the fresh onion.
  4. Grill over medium heat for approx. 15–20 minutes. Towards the end, slightly open the foil to allow the ingredients to brown and develop a smoky barbecue flavour.
