Peasant pot with sausage and potatoes

Ingredients:

  • 300 g Morlińska sausage with chicken breast
  • 500 g potatoes (peeled, cut into large cubes)
  • 2 peppers (red and yellow, chopped)
  • 1 large onion (sliced)
  • 2 cloves of garlic (chopped)
  • 2 tablespoons of oil or lard
  • 2 teaspoons of tomato paste
  • 400 ml of stock (vegetable or chicken)
  • 1 teaspoon sweet paprika powder
  • ½ teaspoon hot paprika (optional)
  • 1 bay leaf
  • 2 allspice grains
  • salt and pepper to taste
  • fresh dill or parsley for sprinkling

Preparation:

  1. Cut the sausage into half-slices, toss into a heated pan with oil and fry until lightly browned.
  2. Add the onion and garlic, fry for 2–3 minutes. Then add the potatoes, stir and fry for a while longer.
  3. Add the chopped peppers, season with sweet and hot paprika powder, salt and pepper. Add the tomato paste and mix thoroughly.
  4. Transfer everything to a pot (or leave in a deep frying pan), add the stock, bay leaf and allspice. Simmer covered for about 25-30 minutes, until the potatoes are soft.
  5. Season to taste, sprinkle with fresh dill or parsley and serve hot.
