Ingredients:

• ½ pack Favita Mlekovita cheese (approx. 130 g)
• 1 ground cucumber
• handful of cherry tomatoes
• 2 handfuls arugula or salad mix
• handful of fresh raspberries
• 2 tbsp olive oil
• 1 teaspoon honey
• 1 teaspoon lemon juice or wine vinegar
• salt and freshly ground pepper
• optional: a few mint or basil leaves

Preparation:

1. Cut the cucumber into thin slices (preferably with skin on).
2. Cut the tomatoes into halves or quarters. 3.
3. Dice the Favita cheese - not too small, so that it retains its texture in the salad.
4. Rinse and dry the lettuce (arugula or mixed lettuce is good for enhancing the flavour of the dressing).
5. In a small bowl, mash half the raspberries with a fork.
6. Add the olive oil, honey, lemon juice and a pinch of salt and pepper.
7. Mix thoroughly - you can also blitz the whole thing for a more uniform texture.
8. In a large bowl, mix the lettuce with the vegetables and cheese.
9. Pour dressing over just before serving and mix gently.
10. Sprinkle with the remaining raspberries and fresh herbs.
