Ingredients:
For the warming tea:
- 2 Herbapol Ogród Malina–Cytryna (Raspberry and Lemon) tea bags
- 450 ml hot water
- 100 g frozen raspberries
- 1 red apple
- 2 orange slices
- 1 cinnamon stick
- 2 cloves
- 1 star anise – optional
- 2 tsp honey
- 2 tbsp water, for boiling the raspberries
For the caramelised apple:
- 1 tsp soft brown sugar
- 1 tbsp water
To decorate:
- cinnamon sticks
- apple slices
- a sprig of rosemary – optional
Preparation:
- Pour 450 ml of hot water over the Herbapol Raspberry and Lemon tea bags and brew according to the instructions on the packaging. Remove the tea bags.
- Place the frozen raspberries in a small saucepan, add 2 tablespoons of water and bring to the boil. Boil for 2–3 minutes, stirring regularly, until the raspberries are completely heated through.
- Wash the apple, remove the core and cut it into thin slices.
- Add the brown sugar and 1 tablespoon of water to a frying pan and heat over a medium heat. Add the apple slices and cook for around 3–4 minutes, until lightly caramelised and golden.
- Pour the brewed tea into a saucepan. Add the cooked raspberries, cinnamon stick, cloves, star anise and orange slices.
- Gently heat for around 3–4 minutes, allowing the flavours and aromas to infuse.
- Add the caramelised apple slices and remove the saucepan from the heat. Leave to cool slightly, then stir in the honey.
- Pour the warm tea into clear mugs or glasses, dividing the raspberries and apple slices between them.
- Garnish with a cinnamon stick, an apple slice and a sprig of rosemary. Serve immediately while still hot.
